Brown Rice — Center of the Diet

Sits at the exact center of the yin-yang spectrum. Whole grain — bran, germ, endosperm intact.


Pressure Cooker Method:

1. Wash 2–3 times. Soak 6–8 hours with sea salt

2. 1.25:1 water ratio

3. Full pressure → low heat → 50 min

4. Natural release 10 min


Chewing: 50 chews per bite. Amylase converts starch to maltose — rice tastes sweet. That means you chewed enough.


Varieties: Short-grain (yang, winter), medium (balanced), sweet brown rice (sticky), brown basmati (summer).
