
Ground toasted sesame seeds + sea salt. On rice at every meal.
Why not plain salt? Sesame oil coats salt crystals, slowing absorption. Gentler, more balanced.
Recipe (10:1):
1. Toast 1 tbsp sea salt until it smells oceanic
2. Toast 10 tbsp unhulled sesame seeds until they pop and crush easily. Do NOT burn.
3. Grind in suribachi (grooved mortar) until 80% crushed
Make fresh weekly — oils go rancid once ground.
