
George Ohsawa (1893–1966) brought macrobiotics to the West. His book Zen Macrobiotics introduced the concept in the 1960s.
Michio Kushi (1926–2014) was Ohsawa's student and the most influential teacher in America. Founded the Kushi Institute. Wrote 70+ books.
Ohsawa was extremely restrictive — sometimes just brown rice and water. Kushi expanded it into a flexible, practical system with vegetables, beans, sea vegetables, fermented foods, and fish. Modern macrobiotics follows Kushi.
