
Sautéed matchstick root vegetables. Strengthening, warming, delicious.
Recipe:
1. Cut burdock root into thin matchsticks (1–2 cups)
2. Cut carrots into same-size matchsticks (1 cup)
3. Heat 1 tsp dark sesame oil in skillet
4. Sauté burdock first (it is tougher) for 3–4 min
5. Add carrots, sauté 2–3 min more
6. Add water to half-cover. Simmer until tender (10 min)
7. Season with soy sauce (1–2 tsp). Cook until liquid evaporates.
Variations: Add lotus root. Add dried tofu strips. Sprinkle sesame seeds on top.
Keeps in fridge 3–4 days. Make a big batch. Eat daily.
