Quality Matters — Not All Health Food Is Equal

Organic is preferred for everything. Pesticides are toxic — removing them is the point.


Miso: Must be unpasteurized and aged 18+ months. Cheap miso is paste with flavoring. Read labels. Brands: South River, Miso Master, Ohsawa.

Soy sauce: Must say naturally brewed. Aged 18+ months. Kikkoman organic works. San-J for tamari.

Sea vegetables: Japanese or North Atlantic harvested. Mitoku, Eden, Maine Coast Sea Vegetables.

Grains: Organic, whole (not pearled or instant). Lundberg for rice.

Tofu: Organic, non-GMO. Nasoya, Wildwood, locally made.


Rule: Fewer ingredients on the label = better. Ideally one ingredient. Brown rice should contain: brown rice. Miso should contain: soybeans, barley, salt, water, koji.
